Subject: restaurants and recycling

I live in Chicago and I am trying to pitch a recycling proposal to my managers at the restaurant where I work. I have been having difficulty in finding any resources for the Chicago area. Do you have any suggestions? I thought Illinois was behind the times and my search has solidified this belief.
