Following up on Fred's answer...

Aluminum and steel cans enter a recycling facility generally mixed in with other recyclables. A magnet is used to extract the steel items, and an eddy current separator is used to extract the aluminum. These processes are fairly efficient and can differentiate between the two types of cans.
